Hot Pink Drink!

If staring at this vibrant pink drink doesn’t make you instantly happy, make note of the fact that it doesn’t have ANY artificial colors. Nature produces things this color in Arizona. Things that can be made into food! Some people believe it’s all brown here with an occasional green saguaro, but this batch of prickly pear lemonade is out to prove them wrong one hot pink sip at a time! What does one need to make prickly pear lemonade, you ask?

PRICKLY PEAR SYRUP! Yes, you could drizzle it over cheesecake. Or ice cream. Or even put it on your pancakes. Mesquite flour pancakes if you’re feeling really Arizonan, but that’s an adventure we’ll discuss another day. Today, it’s for making lemonade.

In it’s more concentrated form, it almost resembles a creepy jar of blood, so that’s fun! Just keeping that filed away for Halloween.. In the meantime, here’s the recipe!

Prickly Pear Lemonade

2 1/2 cups fresh lemon juice
6 cups water
1 cup sugar
2 tablespoons prickly pear syrup

Mix the juice, water, 3/4 of the sugar, and the syrup well. Take a sip, then add remaining sugar until you’ve reached your desired sweetness.

Serve prickly pear lemonade chilled or over ice, and enjoy a glass with a friend who is as adorable as you!
